The Stuff:
- 4 potato latkes
- 4 slices of pastrami, cut in half (alternately 12 thin slices of salami)
- 4 eggs
- 1 tablespoon milk or cream
- Salt and pepper, to taste
- 1 tsp Never Not Eating Shawarma Spice
- 4 slices of cheddar cheese
- 2 bagels, sliced in half, lightly toasted
- Mayonnaise
- Hot sauce
- Never Not Eating Za’atar for garnish
The Method:
- Turn the broil setting on your oven on low, with one rack on the top of your oven and one on the bottom.
- Put latkes on a baking sheet to keep warm in the oven on the lower rack.
- Cook the pastrami or salami in a cast iron or non-stick frying pan preheated to high, until crispy on both sides. Remove.
- Whisk your eggs in a bowl with the milk or cream, and season with the salt, pepper and shawarma spice.
- Place your slices of cheese on your lightly toasted bagels, and put in the oven on the top rack until the cheese is melted.
- Lower the temperature to medium and heat the cast iron or frying pan to medium and cook your eggs. The idea here is to make a single layered omelette. Start by cooking the eggs, stirring a few times with a spatula, and then as the eggs continue to cook moving the egg from the edges and tilting your pan so the uncooked eggs fill those gaps. Remove from the heat and cover with a lid to set the omelette.
- Remove the bagels and latkes from the oven to assemble your sandwiches. On top of the cheese place your latkes, then 2 slices of meat, then ¼ of your omelette. Then drizzle with mayo, hot sauce and a sprinkle of everything bagel seasoning or sesame seeds.
- Alternately you can use sunny side up eggs, fried eggs, or over easy eggs. They all work very well.

- Lox or smoked salmon (Nova lox)
- ½ red onion, thinly sliced
- 4 eggs
- 1 tablespoon milk or cream
- Salt and pepper, to taste
- 1 tsp Never Not Eating Sumac S&P
- 2 bagels, sliced in half, lightly toasted
- ¼ cup cream cheese
- Never Not Eating Za’atar for garnish
The Method
- On the lightly toasted bagels spread cream cheese, add a latke, lox or nova lox, sliced red onion, egg, an optional piece of cheddar which you can broil, and garnish.
