Za'atar Aioli

The Stuff:

  • 1 large garlic clove, peeled
  • 1 cup mayonnaise
  • 4 teaspoons fresh lemon juice
  • 1/4 cup extra-virgin olive oil
  • 1/4 cup Never Not Eating Za'atar 

The Method:

  1. With the machine running, drop garlic through the feed tube of the processor and chop finely. Add mayonnaise and lemon juice.
  2. Drizzle in oil in a thin stream, blending until smooth.
  3. Transfer to a small bowl. Whisk in za'atar and season with salt and pepper.
  4. Let stand at least 30 minutes to allow flavours to develop.
