Its name means "top of the shop," a nod to the best spices a merchant had to offer, and it earns it. Rub it on lamb, chicken or steak, then hand it to the fire. The flames wake up its aroma and bring out its deep, layered warmth. Best enjoyed outdoors, with tongs in hand. 

Ingredients: Cumin, Turmeric, Salt, Black Pepper, Ginger, Coriander, Nutmeg, Cinnamon, White Pepper, Allspice, Clove, Aleppo Pepper.
